Bavette's is the Las Vegas outpost of Brendan Sodikoff's Chicago original, a candlelit, low-lit room inside Park MGM built to feel like a supper club, not a casino steakhouse. The dining room is intimate by design, and on Friday and Saturday nights the seven o'clock and eight o'clock seatings are gone long before the weekend arrives. The demand is real enough that prime tables here trade hands on the resale market for a premium. The room fills, and the good hours are spoken for first.
We hold a relationship with the host stand, not a place in the online queue. We watch the book for the weekend cancellations that surface late and never reach the public, and we know which seatings open when a large party falls through.
