The dining room is small and the city's appetite for it is not. Bonnie's releases new tables only 13 days out, every morning at 10am Eastern, in a single thin batch. With seating capped at parties of nine and the restaurant dark on Mondays, the best nights vanish within minutes of the drop. What remains goes to cancellations, which surface at random and disappear just as fast. The result is a table that looks gettable on paper and proves nearly impossible in practice.
