Why this room is hard

Cote on West 22nd Street is Simon Kim's Korean steakhouse, one Michelin star, and a dining room that has been a hard 8pm since opening in 2017. The Butcher's Feast and the dry-aged steaks are the draws; the room is louder, faster, and younger than its star count suggests.

Resy lists the room but the 7-to-9pm tables go in the first minutes of release. The bar pours the same wine list and seats walk-ins; the back room (the Steak Omakase counter) is a separate harder reservation that books its own Tock.
