Sartiano's lives inside The Mercer Hotel on Prince Street, the corner that has anchored downtown New York for two decades, and it carries the gravity of Scott Sartiano's Zero Bond world along with it. The dining room is intimate, the prime-time seating is finite, and the demand reaches far past the people actually eating that night. Reservations open roughly one month ahead by the date, and the most wanted Thursday-through-Saturday windows are claimed within minutes of release. What looks like an open table at 6 o'clock rarely survives to the 8 o'clock seating you actually want.
We do the watching so you do not have to. The moment the date you want comes into release, we are there, and we keep watching the cancellations right up to the night itself.
