The dining room moves through roughly three hundred and sixty ribs a week, and prime weekend seats are spoken for months out the moment the book opens. The room has had two owners in seventy-five years, the Betz family among them, and it runs on the same patient rhythm it always has. What is left for the public is the bar waitlist and a long wait standing up.
