Saison cooks everything over an open wood hearth in an intimate room on Townsend Street, and the tasting menu runs hundreds of dollars a seat before wine. The book opens just once a month, releasing the next month's dinners by the first of the prior month through a single platform, and the prime Tuesday-through-Saturday seatings are claimed almost immediately. Two Michelin stars and a counter built for very few people mean the demand never matches the supply.
It is not a reservation system. It is a guest list. We hold standing relationships with rooms like this one, we know the exact hour the next month posts, and we sit on the cancellations the public never sees. When a seat moves, we already have your name on it.

Why is Saison so hard to book?
Saison is one of the most in-demand tables in South Beach / SoMa. Prime-time seats are claimed within seconds of release, and many never reach the public at all, so refreshing on your own rarely works.
When do Saison reservations open up?
Saison releases tables on a set schedule, and seats also reappear when other guests cancel. We watch both around the clock and move the instant one opens, so you never have to refresh at midnight.
